The shores of Nuevo Vallarta, Bucerias, Sayulita, Rincon de Guayabitos, Lo de Marcos and in general the majority of communities that stretch along the Riviera Nayarit, all share a similar scene every morning when a wave of fishing boats arrive on their golden sands to unload their latest catch. The array of oysters, shrimp, lobsters, snapper, mahi-mahi and octopus, as well as the many other species that inhabit this fertile coastline, are all an essential part of the delectable gastronomy of the region.
The Riviera Nayarit presents an array of interesting specialties to delight your palate, such as Pescado Zarandeado (shaken fish), which is pargo (a fleshy fish) marinated with local spices, cooked over mangrove wood and served with hand made tortillas. Other regional dishes worth mentioning are shrimp pate, ”Pollo a la Plaza” which is fried chicken with French fries and salad, ”Chicharron de Pescado” (deep fried seasoned fish) and ”Chimichangas de Mariscos” (large fried tamales, stuffed with shrimp, oysters, tomato, onion and pepper strips).
